Typical ciguatoxin chemical structures can be described as having long polyether backbones punctuated with cyclic rings of 6, 7 & 8 atoms plus methyl side groups.

Ciguatoxins are naturally occurring toxins produced by dinoflagellates & a source of food poisoning in fish. It occurs when herbivorous fish which have fed on dinoflagellates are in turn eaten by carnivorous fish. This can be described as bioaccumulation as it moves through the food chain & concentrates in top predators such barracuda, grouper, snapper, triggerfish & wrasse. Ciguatoxins primarily target neurological, gastrointestinal and cardiovascular tissues. Symptoms can include nausea, vomiting, diarrhea & abdominal pain.

There is no antidote for ciguatoxin poisoning, and it cannot be destroyed by cooking.
