Acrylamide's chemical structure consists of a vinyl group bonded to an amide functional group (-CONH2). Acrylamide is highly reactive and is used to make polyacrylamide polymers. Acrylamide also forms where cooking temperatures such as frying, baking, and roasting exceed 120°C (250°F). This process is known as the Maillard reaction which also produces desirable flavor compounds.
