Capsaicin is an alkaloid compound found in chili peppers, genus Capsicum, that gives them their characteristic heat. Its chemical structure can be described as having a vanillyl functional group (4-hydroxy-3-methoxybenzyl), a long hydrophobic hydrocarbon tail (8-methyl-non-6-enoyl) & an amide bond linking the two groups. The vanillyl group interacts with our sensory receptors, while the long hydrocarbon tail is lipophilic & enables its transport across cell membranes. This produces the burning sensation which can be especially nasty if one forgets to wash ones hands after handling and then rubs ones eyes.
