Zingerone is classed as a ketone. This compound also has a methoxy1 group attached to the benzene ring of a phenol moiety. It is derived from gingerol, an active chemical component of ginger. It produces the distinctive taste and spicy flavor of ginger. One of its alternative chemical names is vanillylacetone which is reflected in its having a chemical structure similar to vanillin. It also has a chemical structure similar to another flavoring chemical, eugenol.
Some sources classify this molecule as a methoxyphenol. However, the IUPAC functional group hierarchy puts ketone at a higher priority than alcohol (phenol), so this is classed and named under IUPAC rules as a ketone.
Zingerone has been investigated for potential antioxidant activity as well as anti-inflammatory, anti-cancer, lipolytic, antiemetic and anti-diabetic effects.2
