Eicosapentaenoic acid is a 20 carbon polyunsaturated omega 3 fatty acid. It consists of a 19 carbon aliphatic (alkene) portion which has 5 cis double bonds at positions 5, 8, 11, 14 and 17 and a carboxylic acid functional group. EPA is metabolized & incorporated into cell membrane phospholipids and may play a role in limiting inflammation. Fish oils, especially those extracted from fatty fish such as salmon, are a good dietary source.
