Fatty acids have a carboxylic acid functional group with long aliphatic carbon chains-alkanes (saturated) & alkenes (unsaturated). The unsaturated fatty acids have one or more carbon-carbon double bonds which in turn make either cis or trans isomers & the various omega 3, 6 & 9 structures.
Fatty acid chemical structures vary greatly in length. Short chains have 5 or less carbons, medium are 6-12, long have 13-21 & very long chains have 22 or more. They are the substructures of triglycerides which make up most fats in the human body. There are enough parts to build any 6 C18 fatty acids or two triglyceride molecules such as triolein & tristearin (shown in the image).
This kit is compatible with our Orbit Biochemistry Class Set, our 12 base pair DNA & alpha helix models. Or, build these structures with our Foundation Student Organic Chemistry Set 68845NV or Advanced Organic Chemistry Student Set 68827W but both may need extra parts depending on what you want to build.
Indigo Instruments has maintained a substantial inventory of genuine Cochranes of Oxford (Orbit) parts for 30+ years and are compatible with every molecular model kit we have sold. This level of quality may appear expensive but no parts support from other vendors costs even more.
Lipids are a broader category that includes triglycerides (fats), phospholipids (cell membrane components), and steroids (hormones, etc).
Some of the shorter chain fatty acids you can build include butyric acid, isobutyric acid, valeric acid, isovaleric acid & 2-methylbutyric acid.
