Linoleic acid is a polyunsaturated omega 6 fatty acid with the molecular formula C18H32O2. Its structure is characterized by an 18 carbon chain with two cis double bonds (C=C) at the 9th and 12th carbon positions from the methyl end, hence its structural designation of C18:2, cis9,cis12. These two alkene groups create kinks in the molecule, which pack less closely making cell membranes more fluid at body temperature.
The acidic carboxyl group (-COOH) functional group is located at carbon-1 which classifies it as a fatty acid. This enables linoleic acid to form ester linkages with glycerol in triglycerides, and dissolve slightly in polar solvents.
Dietary sources of linoleic acid include oils extracted from sunflowers, corn, soybeans, sesame seeds & almonds. Linoleic acid is considered an essential fatty acid since humans cannot synthesize this vital precursor to many enzymes and hormone like compounds.
