Health regulations recommend sanitizing knives & machine surfaces with chlorine bleach solution at 100-200 ppm to destroy bacteria such as Listeria sp. and Salmonella sp. that can cause foodborne illness.
This can be limited by proper cleaning of dishes, countertops, glassware with a bleach solution rinse. Municipal Health recommend a level of 100-200ppm for effective germ inhibition. Test at least once a day in smaller restaurants, more frequently in busy establishments since freshly rinsed dishes or glassware can dilute your rinse solution.
