Peracetic acid is used in the range of 20-50ppm for immersion chilling or as a spray prior to packaging to help maintain a pathogen-free environment. It can also be used to clean conveyors, cutting tools, and other surfaces in contact with chicken.
You can compare the chemical structures of peracetic acid (aka peroxyacetic acid), chemical formula C2H4O3, to acetic acid, hydrogen peroxide & N-N-diethyl–p-phenylenediamine using our 3D Molecular Model Builder.
