Why kefir? Research indicates it is a beneficial food with many health promoting properties. Further, it is an effective delivery medium for probiotic microorganisms that produce functional organic substances.
Kefir is cow, sheep or goat milk fermented with Lactobacillus kefiranofaciens bacteria & Saccharomyces turicensis yeast. They convert lactose (milk sugar) into lactic acid to produce a slightly acidic, carbonated liquid yoghurt with a pH of 3.4-3.6.
Kefir's exopolysaccaccharides, e.g. kefiran, are fermentation byproducts of probiotic microoganisms such as Lactobacillus kefiranofaciens. The physicochemical properties of this polysaccharide may have antioxidant activities, antibacterial properties, epithelium protection, anti-inflammatory effects & other health benefits.
Non-dairy kefir using almond milk, oat milk, etc. are another way to add kefir's dietary benefits without having to deal with lactose digestion.
